Spinach Vermicelli soup

OThink Veggie Think Green Think Soup . Think all at the same time... Think Spinach Soup.





Ingredients:

Spinach (stalk removed)- 2 cups
Egg (beaten) - 1
cheddar cheese(grated) - 1/4 cup
Broth - 2 cups
Nutmeg Powder - 1/2 tsp
Salt and pepper to taste
Vermicelli - 1/2 cup






Preparation:

Wash spinach in warm water 4 - 5 times ,chop and keep aside
Beat egg in a big mixing bowl, add spinach, cheese and nutmeg and mix
In a large skillet, heat broth, add the mixture,vermicelli,  salt and pepper and bring it to boil

Serve Hot.
